My company, which is a Fortune 500, currently runs the entire operations area out of Microsoft Access DBs(literally migrated to M365 a week ago). My jobs main role is to create and maintain these DB, mostly through design view. So there is not much opportunity to actually write SQL, and I’m not quite sure how to transition to the SQL that the rest of the world is using SQLServer/PostgreSQL. The code academy course seemed to give a good basic level understanding. But I am not even sure how databases work outside of Access which has buttons, forms, etc and a user friendly design view. Any suggestions?

Whats the difference between CONCAT and CONCATENATE?
The newer CONCAT function can reference a range of cells. =CONCATENATE(A1,A2,A3,A4,A5) becomes =CONCAT(A1:A5)
You can always put your queries into SQL view and actually write them as straight SQL (I do this a lot) and that is one way to become better at SQL in a way that is transferrable to other DBs. Every SQL implementation has its quirks though (SQL Server, Oracle, SQLite, Postgres - each one has unique elements in its "SQL language" although in principle there is some kind of base SQL compliance that they all adhere to).

All queries in Access are written in SQL -- and in my experience, the nomenclature is very close T-SQL, with some notable differences. As xenou is pointing out, you can queries using SQL view.

If you are looking for a better understanding of how to work with MS Access, I would recommend learning as much VBA as you can.
