What version of Excel 365 do I need to be able to use the STOCKHISTORY() function? My software update attempt says Excel is up-to-date but I just wanted to verify.

Waterfall charts in Excel?
Office 365 customers have access to Waterfall charts since late 2016. They were added to Excel 2019.
I've no idea when it will be released to you, but probably not until Jan or July next year.

I would have thought the 2nd Tuesday of July this year (unless Covid19 has had any effect).

You could well be right, but AFAIK the LET function wasn't released to the semi-annual channel in Jan, even though it was released to the monthly channel in Oct/Nov last year.
