I have an file in csv format that has a field with page ranges in it such "3-4" or "6-10".

When you open this into Excel, it converts it to a date. Once converted, I can't get it back to text.

Any workaround?

Excel Facts

Format cells as time
Select range and press Ctrl+Shift+2 to format cells as time. (Shift 2 is the @ sign).
Import the file via the data tab > From Text/CSV.
Then in step 3 of the import wizard you can select the column & select Text
