Protect workbook for read only unless have password

In prior versions of excel, you can protect a workbook and users when opening the file would be asked to enter the password to open with full editing priveleges or allow the user the option to open as read only. Apparently things have changed a bit in Excel 2010 and I cannot seem to replicate the same security level as with the prior versions explained above. I have tried every different option combination using the File/Info/Permissions...File Sharing... as well as the ones found under the Review tab for Protect Worksheet/Protect Workbook/Share Workbook/Protect and Share Workbook/etc.. I came close to it but then workbook structure like copying a worksheet within the workbook would be disabled.

Does anyone know how to accomplish the same results as explained in my first sentence above, "protect a workbook and users when opening the file would be asked to enter the password to open with full editing priveleges or allow the user the option to open as read only" in Excel 2010?

Did you know Excel offers Filter by Selection?
Add the AutoFilter icon to the Quick Access Toolbar. Select a cell containing Apple, click AutoFilter, and you will get all rows with Apple
When saving click the dropdown next to the SAVE button and choose general options, you have the opportunity to make it password protected read only :)

I do not see the dropdown next to the save button you are mentioning. Are you talking about Excel 2010? I see the file tab, then save..save as...open...etc and at the bottom of that list there is choice for Options...but nowhere in that Options subtab is there anything about password protected read only...

I found it now...it was under the File Save As and to left of Save button there was a Tools drop down.
