Best way to learn Power Query?
Read M is for (Data) Monkey book by Ken Puls and Miguel Escobar. It is the complete guide to Power Query.
This isn't really an Excel question, but why not use the inbuilt functions in Abode

Open a file in Acrobat.
Click on the Export PDF tool in the right pane.
Choose Microsoft Word as your export format, and then choose Word Document.
Click Export. ...
Name the Word file and save it in a desired location.

If you're using Office 2013 or later, you can open the files directly in Word and use it's Save As method for the conversion.
