So formula to extract [string] is column C is -
=IFNA(TEXTBEFORE(TEXTAFTER(B5,"["),"]"), "")

and A is same but with ( )

Question - I also want to CUT (delete) the string from column B.

Prevent GETPIVOTDATA. Select inside a PivotTable. In the Analyze tab of the ribbon, open the dropown next to Options and turn it off
I'm not sure if this is what you seek. There are a number of ways to do this.

Book1
ABC
1
2dueTask to do … [name](due)Task to do … [name]()
Sheet1
Cell Formulas
RangeFormula
C2C2=TEXTBEFORE(B2,"(")&"()"

Solution
I'm not sure I fully described the task.

So this is the formula view of the cells -

Cell Sheet1!A4 is >
Task to do … [name] (due)

What I want the end-result to look like is >

My current end-result is >
So I want cell B to be stripped / deleted of the strings I copied to A & C >

Try:
Excel Formula:
=TEXTBEFORE(Sheet1!A4," …")

Also, TEXTBEOFRE/AFTER has a [not found] parameter, so you don't really need the IFNA().
