I have looked everywhere, but what I really need is to change "John Smith" to "John S." on a public scheduling board. I've tried toying with multiple "first init last name" formulas, and can't quite figure this one out. Any suggestions?

You, sir, are both a gentleman and a scholar. I just now added someone with three names for the first time ever, and found this problem. It's nice that it works for both two and three names.

How to show all formulas in Excel?
Press Ctrl+` to show all formulas. Press it again to toggle back to numbers. The grave accent is often under the tilde on US keyboards.

I'm glad it worked out for you. Guess I should mention, though, the formula cannot distinguish between a double first name and a first/middle name. I am not sure how you are obtaining your names, but I thought I should mention it just in case there is a way for someone who uses their middle name to specify it in your input process. (Names, like addresses, can be a real pain to parse sometimes.)
