Need a formula to count how many items with a Status of "Open" in column E have surpassed the Due Date in Column G.

Need 1 part of a formula to always point to the same range? use $ signs: $V$2:$Z$99 will always point to V2:Z99, even after copying
=countifs($E$2:$E$100,"Open",$G$2:$G$100,"<"&today())

this should be the easiest to comprehend:
Excel Formula:
=COUNTIFS(E:E,"Open",G:G,"<"& TODAY())
with the added benefit of case-insensitive text comparison.
