Google Sheets- help creating KPI dashboard from master data

Hello,
I am creating a KPI dashboard for my business from a master sales data sheet. I have attached a sample of how the master sales data sheet is set up. I have already created a dashboard with weekly, monthly and quarterly sales data but I would like to be able to pull data and create a stacked column chart by choosing a date range and choosing a "category" of sales (beverages, food, gift, merch) and have a stacked "sales" and "tickets" chart. If I can wrap my head around this, I would also like to be able to select a date range and then compare each category of sales in a pie chart or something similar.
