I am working on a project that will display points across a pivot graph in a line graph. How can I organize a pivot graph in order to have it plot out the points. I currently have the following information in columns: Sub-Project (sw1-Graph Filter), Milestone (colored lines with dots at each update), Date of Update (Y-Axis), and Projection Date (X-Axis). I aim to have all the months displayed across the X and Y axis. please help! Here is the link to the image of what i'm aiming to build. Untitled : Photo

You can't make this chart as a pivot chart. It must be an XY Scatter type, which is not supported in a pivot chart. Nut you can make a scatter plot from a pivot chart. See my tutorial Making Regular Charts from Pivot Tables.

Then you're going to have many sets of X values and one set of Y values, which Excel isn't so good at. I answered a question about just this topic earlier this week. See How to make YX scatter instead of XY scatter Excel Graph.
