Newbie formula with Min,Max result

Monthly shift work that is variable with minimum guarantees and maximum payouts. The first paycheck is based off a value that is the average workers hours -2hrs. Never less than 72hrs, never more than 80hrs.

average hours -2 = 1st paycheck (min 72, max 80)

I am lost whether I can combine Min,Max functions, or if this is a IF equation with 3 possible solutions?

=max(B5-2,72)
=min(B5-2, 80)
=B5-2

Use AND(test, test, test, test) or OR(test, test, test, ...) as the logical_test argument of IF.
