I use the following formula to calculate how many days were used last month

=MAX(0,MIN(IF($K422="",$I422,$K422),DATE(YEAR(TODAY()),CEILING(MONTH(TODAY()),1),0)+1)-MAX($J422,DATE(YEAR(TODAY()),FLOOR(MONTH(TODAY())-1,1),1)))

and this formula to calculate how many days were used this month through today

=MAX(0,MIN(IF($K422="",$I422,$K422),TODAY())-MAX(DATE(YEAR(TODAY()),MONTH(TODAY()),1),IF($J422="",$H422,$J422),0))

I want to do the same as above, but used last week and this week and can't seem to figure out how to make the formula work.

Any help is greatly appreciated.

When they said...
When they said you are going to "Excel at life", they meant you "will be doing Excel your whole life".
How are you defining "this week"? Is the start date the Sunday preceding today (or the Monday) or something else?
