I found a simple, non-scripted way to save Excel files as pipe-delimited. It comes from the FAQ section on http://www.ezscripting.com/faq/.
1. Change the default list separator on your machine by going to Start>Settings>Control Panel>Regional Settings.
2. Click on the Number tab.
3. In the List Separator field type in (or select, if you've done this once already) the pipe symbol.
4. Apply the change and close the Regional Settings window.
5. Now, when you save files as CSV from Excel, they will be delimited by the pipe symbol rather than comma separated.
Obviously, to reverse this change, you will need to change the default list separator back to a comma in the Regional Settings window.
Depending on your needs and/or frequency of use, this may be the simplest approach to this "problem".
