I need to change the shading in multiple cells and in multiple worksheets. The grey shading default is 25% in the fill color menu. Is there a way to lighten the shading to 10%?

How to total the visible cells?
From the first blank cell below a filtered data set, press Alt+=. Instead of SUM, you will get SUBTOTAL(9,)
Tools>Options>Color Tab. Select the color you wish to change and choose modify.

Click on Tools- Option, then the Color tab and the Grey box. Then click on Modify, Select the Custom tab and change the slider to the shade you require.
