Or from two ranges on one sheet? I can't find a way to do this.

Excel Facts

How can you turn a range sideways?
Copy the range. Select a blank cell. Right-click, Paste Special, then choose Transpose.
The problem I'm encountering is that my source range may exceed the number of rows on the worksheet. I was going to have a second sheet with more data, and try to make a pivot table that would draw from both ranges...

...but it looks like there are more unique values in a range like that than a pivot table can handle.

Plus the pivot table is really weird-looking. I found this, which says it's a way to produce "sanitised data" that can be pivoted, but I really don't understand what that means. I'm working with it to try to figure it out though.
