Charting and Averages by day

Hiya,

I'm trying to narrow my data by day thereby making it easier to chart. Right now I have things set across a row that starts with Wednesday, 1st of June and goes through Thursday, 30th of June. How do I pull all data from Mondays column only to a single cell reference below?
