I'm needing a conditional formatting formula that will highlight cells in column 2 that are more than 1 day after the day in column 1. For Example, the cell in column 1 is Monday and the cell in column 2 is Wednesday, Thursday or Friday, so the column 2 cell should be highlighted.

The format and structure of your data are important factors at play here. Can you please post a small sample of your data and your expected output?
It would be most helpful to also see the exact rows/columns your data is in so we can tailor the response to your exact sheet.
MrExcel has a tool called “XL2BB” that lets you post samples of your data that will allow us to copy/paste it to our Excel spreadsheets, so we can work with the same copy of data that you are. Instructions on using this tool can be found here: XL2BB Add-in
Note that there is also a "Test Here” forum on this board. This is a place where you can test using this tool (or any other posting techniques that you want to test) before trying to use those tools in your actual posts.
