Count occurances of a character in a cell

Hi All,

I have a character in a cell which separates the number of times a visitor has come to a website and where they came from.

What I am looking to do is count the number of those charatcters so that I can work out an average.

so for a string like the below
source1#20110903132829|source2-en#20110903173802
I would want 2 to be the result but for text like this
source1#20110904093001||source2#20110904140828
I would want 3 to be the answer

any ideas on how i do this?
