Creating Pivot Table for a Newbie

I am a newbie to pivot tables and was hoping that I could get help creating a Pivot Table.
I currently have a table that looks similar to this:

Dr.AZ/Primary Care/1/2/4/5/1/.....total/Percent

Dr.AZ= referring doctor
Primary Care= specialty
1,2,4,5....=number of referral per month.
Total= total referrals for Fiscal Year
Percent= Percent of referrals from Dr. AZ

What I am trying to accomplish is:

1. Comparison of Referring doctors by month and by year prior

2. A look at Specialties referring

3. Percent of referrals for given doctor.

Is all this doable with pivot tables?
