Date Stamp?

This is probably an easy one, but I'll ask anyway. I use the =TODAY() statement to fill in the current date on a new file or template upon opening. The problem is that when I re-open the same document at a later date, the info in that cell update (and I may not want it to). Is there a way to date stamp the file with the date when it was originally created and have it retain that info?

Current date Select a cell and press CTRL+;
Current time Select a cell and press CTRL+SHIFT+;

Current date and time Select a cell and press CTRL+; then SPACE then CTRL+SHIFT+;
