Waterfall charts in Excel?
Office 365 customers have access to Waterfall charts since late 2016. They were added to Excel 2019.
You have to use a named range...

On the seperete tab, highlight the range of data and click Insert - Name - Define
Give it a name like MyRange or whatever

Then in Validation on any other page, you can use
=MyRange

Hope that helps.
