Editing XML Maps in Excel 2007

There are many things that I don't understand about XML Maps. I have a table, which I'm trying to export as an XML file. It's a very simple structure - every row has the same structure and every cell in each row is simply exported as an XML element whose name is the same as the header cell of the column. Note that I'm not intereted at this stage in importing, only exporting. The system of mapping seems to assume I'm importing an existing XML file - I'm not - I'm creating a new XML file by exporting from Excel. Also I don't have a schema. I could of course create one if I have to, but in this very simple situation it's difficult to see why one is necessary.
How do I:
- disconnect the worksheet/table from its current XML Map so I can associate it with another one?
- unmap an XML element from a cell so I can then map it to a different one?
- see the map, so I can check it's correct?
- add a column to the table, and hence another element to the XML file, and another entry in the map to map the new column to the new element? It only seems possible to map an element already there, or remove it - not to add a new element to it.
- see the "inferred XML Schema" for the table, which (according to the help file) it's created?
- change the name of one of the column headings, and the corresponding XML element?

This is not very intuitive...
