is there a way to have extra workbooks open on separate excel windows on the task bar?

All open workbooks go into just the one window - this makes it more difficult to switch between workbooks.

I use the 'switch windows' option on excel, but it would be an advantage to be able to choose to add extra windows for excel workbooks.

Not that I'm aware of. The default behaviour for Win 7 is to group all open windows for an application under the same icon.

You can also use Ctrl+Tab to switch between windows in Excel.

It is possible but you need to change the taskbar properties. Right click on the taskbar, select properties and change the dropdown "Taskbar buttons" from "Always combine, hide labels" to "Never combine". Sadly there's no "Never combine, hide labels" option.
