Excel Changes Numbers to Dates (Not Formatting)

When I save a document with numbers, then reopen the document--it changes my numbers to dates. Is there some setting somewhere that is doing this. It doesn't have anthing to do with how I have tried formatting it. It will change any of my number formats to dates.

What is the shortcut key for Format Selection?
Ctrl+1 (the number one) will open the Format dialog for whatever is selected.
