Is it possible to on opening a workbook set the font and size, then on needed make any changes?

You could put something like this in the Workbook Open event:

Private Sub Workbook_Open()
With Worksheets("Sheet1").Cells.Font
    .Name = "Arial"
    .Size = 10
End With
End Sub
