Formula to calculate a continuous # of days

I was wondering how to track the age of something. For example, the age of scaffold boards. I need to track the elapsed time, in days, on any # of boards that have been on a scaffold. The # of days need to be calculated automatically as the scaffold ages. If I access the data one week, and a week later I access it again then I would like the data to represent that one week of elapsed time automatically. Is this possible? If so, how would I calculate this?

Welcome to the board
Put your start date in A1 (in format DD/MM/YYYY or US style MM/DD/YYYY depending on what settings your Excel is using)
In A2 enter:

=TODAY()

In A3 enter:

=A2-A1
