Pick List that groups

I want to be able to choose from a list but the list is huge so I have catagorised them and would like to be able to select a validation list that will then produce another pull down list etc. How do I get the pull down list to link to another changing cell?

Format cells as time
Select range and press Ctrl+Shift+2 to format cells as time. (Shift 2 is the @ sign).
That looks similar, but I want to catagorise my list so that you pick a type then you pick the item and the item list available is dependent upon the type you chose. Any ideas how to adapt this?

I've got this working, but I want to add things to the bottom of a list and that means my named ranges are not in adjacent cells. Is there a way to use a lookup to name ranges?

Not sure that last post reads very clearly.
I can get the grouping to work with Named ranges and Indirect. But as the spreadsheet is a continuously changing file, new items will be added to the bottom of the list. These will have the categories defined as part of the data, but they will not be linked to the named ranges I'm using for my pick list. Is there someway of making the named range search for the category and include it in its named range?
