Pivot Table - using names vs. numbers

MS Excel 2007 - Pivot table questions:

1) Is there a way to make a pivot table with using the names in your columns vs. numbers? For example, I want my rows to say apples, Oranges, grapes and I want my columns to say what state I can purchase them in: California, Washington, Florida, Oregon.

2) Is there a way to set my default so that every time I make a pivot table, my text in my columns headers will wrap - it is annoying with them stretching out and resizing your columns each time. I have tried pre-sets, but can't seem to click the right setting.

Any and all helps is MUCH APPRECIATED!
