Protect and Unprotect ledger??

I'll start by saying I know that I can just password protect and this request would be near pointless for the application I am needing it for. With that said, I don't want to do that because I need to when it is happening. I will password protect once I find out who is changing this. I have workbooks with multiple pages that are protected across multiple sheets because there are cells with formulas I do not want modified.
There is no reason why the end user should ever have to unprotect a sheet, AT ALL.

My request is I would like to have a code that records the date and time each instance a sheet in the workbook is unprotected. The new sheet to record the data can be called Ledger. Is this possible???
