Referencing a cell once per week to obtain value

In cell AA85 I have an exchange rate which has been been referenced externally from a website using Web Query. In another cell I am referencing AA85 and it is obviously updating with it.

Ideally I would like this new cell to only update from AA85 once per week, every week - lets say 11.59pm on Sunday. Once updated the value would remain the same until next Sunday when it is updated again. Can anyone help with a formula that would enable me to do this?

I have tried to adjust the parameters for updating in Web Query, but it only seems to allow me to update at maximum every 999 minutes (16.65 hrs), which is no use.
