Would it be possible to take an account number like 123-456-789 and make it so that it would only look something like XXX-XXX-789? Thanks

Test for Multiple Conditions in IF?
Use AND(test, test, test, test) or OR(test, test, test, ...) as the logical_test argument of IF.
You could use a formula approach and hide the column with the full account number. That way you would be able to see it if you needed.

="xxx-xxx-"&RIGHT(A1,3)
