Automatic format change?

Does anyone know what causes the format of an excel document to automatically change to date? When I close a file the format is general, and when I open it again it is date. Very frustrating. I've been battling this issue for quite some time now and haven't been able to find a cause. I've been told it is a bug in Excel 2007, but am wondering if anyone else is having similar issues.
