averaging missing values in pivot tables

OK I have a lot of data from several test samples and test runs. Frequently one of the samples does not have data for one or more of the test runs. When I do an average in pivot tables,Currently the pivot table only counts the fields with values toward the average. I want missing data to count as a zero value when calculating the average. How do I do this?

I have already tried entering dummy data, but this is to time consuming. I've also copied the sum values out of the pivot table and performed my own averaging. And this isn't bad as long as I always have the same number of test runs, but I don't always.

Data is just tabulating with all the test conditions and then I start a pivot table with the format that works best for me. I have used the "table options" window to replace blanks with zeroes, but it still doesn't change the average calculation.
