Calculation using today() function - updating if file remains open

I am using Excel 2003 and am using the today() function to calculate the "Days since our last event."

I have a PowerPoint presentation that includes a link to the calculated cell. The PowerPoint is set to run continually and I am leaving the Excel file open.

I'm finding that our "Days Since" is not updating daily. I assume it is because I am not re-opening the file or forcing a recalcuation. I only access the Excel and PowerPoint file once every 7-10 days. Any ideas how to ensure the calculation updates daily?
