Capture Undo (Ctrl + Z)

Hello,
I was wondering if someone could point me in the right direction please. I am wondering if it is possible to capture a Ctrl+Z / Undo action from a user. I have looked on the web but couldnt see anything relevant.

I need some code to action when a user performs the undo action.
