Changing a number stored as text to a value and vice versa +

Like the title says does anyone know how to easily and simply change a number stored in as text to a value and vice versa. I know you can change a value to number by copying it then using the special paste to a new cell, and i also know you can turn value into text by adding a ' at the start.
Need this as i'm using a vlookup command which doesn't see that the text is the same as a value, also using an old version of Excel so the drop down options for cells don't appear.

Also does anyone know any good guides for pivot tables as i'm a complete newbie on them and wish to figure out what they do.

Oh and last but not least how can you remove named fileds, eg NameofField=A1:C3 <- needs removing so i can use the name for some other field/range/array.

Use a custom number format of #,##0,K. Each comma after the final 0 will divide the displayed number by another thousand
