Can anyone tell me how I can copy all the formulas in a selected area of cells and paste them to a text document without the end product being the result of the formula, but the formula itself.

Waterfall charts in Excel?
Office 365 customers have access to Waterfall charts since late 2016. They were added to Excel 2019.
The following worked for me but I suppose it might depend into which application you are pasting:

1. switch to formula-view mode (Ctrl key and the tilde key together)
2. copy the cells
3. Paste into Notepad (or Word)
