Count number of referrals

I need to count the number of referrals on a Monday morning for the previous week, my current formula also counts today (Monday) but I want it to stop counting the day before any ideas please

=COUNTIFS(Withybush!K:K,">"&TODAY()-7)

It sounds like you need another condition for the end today.
If you wanted it to stop counting with yesterday, it would look something like this:
