When did Power Query debut in Excel?
Although it was an add-in in Excel 2010 & Excel 2013, Power Query became a part of Excel in 2016, in Data, Get & Transform Data.
How about
Excel Formula:
=COUNTIFS(I1:M7,"<>",I1:M7,"<>" & "X")

Use the =Countifs function. Here is the syntax

I'm not suggesting this as any better than Michael's but could be useful for the future to also remember that COUNTIFS can use wildcards, so the result could also be achieved like this.

Excel Formula:
=COUNTIFS(I4:M5,"?*",I4:M5,"<>" & "x")
