Maybe I'm just using the wrong formula, but my current formula is:
Excel Formula:
=COUNTIFS('Main Sheet'!V:V,"-",'Main Sheet'!R:R,"S")
This is counting the amount of cells on another sheet that contain a "-" symbol in column V, if Column R contains an "S".

This works - however, I also need the formula to not include counts if Column Q contains "Inactive".
How do I do this?

Did you know Excel offers Filter by Selection?
Add the AutoFilter icon to the Quick Access Toolbar. Select a cell containing Apple, click AutoFilter, and you will get all rows with Apple
Just plain values. No decimals.

This then:

Excel Formula:
=COUNTIFS('Main Sheet'!V:V,"-",'Main Sheet'!R:R,"S",'Main Sheet'!Q:Q,"<>Inactive",'Main Sheet'!P:P,">=0",'Main Sheet'!P:P,"<=1")
