Create smaller table from a larger one

Hi all, I've been working with Excel quite some time now, but I want to take it a bit further by implementing some VBA and self made array functions and stuff like that.
Current project is to extract data from one large table containing sampled measurement data (for example 3600 rows and 80 columns) and create a new table with a selection of this data. I do not want to filter, but I want to be able to select a part, like certain columns (variable) and from one row number up to another. The number of rows to be included needs to be variable as well. I want to be able to select a part of the data by changing the start point and end point of the extract. First by just putting in a row number for start point and end point. Perhaps in future by changing a slider or so. The size of the new table needs to adjust by itself to the amount of data. I also want a graph that updates together with the data.
