When did Power Query debut in Excel?
Although it was an add-in in Excel 2010 & Excel 2013, Power Query became a part of Excel in 2016, in Data, Get & Transform Data.
If you use a helper column to display the date it's relatively simple. Suppose the date is in A1:
Excel Formula:
=Left(Text(A1,"ddd"))
Or if your dates are derived via a formula, you could probably incorporate something similar into the formula itself.

Try This

Excel Formula:
=LEFT(TEXT(TODAY(),"DDD"),1)
