Dwell time for warehouse stocks

Hi - I am trying to work out how I can get an average dwell time for product which comes in intermittently and gets despatched intermittently.

a screenshot of the file is attached.

As you can see, some products come in and then get despatched piece-meal whereby some will come in and hang around for a while.

I need to be able to see average time the product has sat on the shelf - even if I can do this as an average of the weekly differences. This is the current format but it is new so could change but have about 180 products to track for this.

Apologies - also should mention that some of the product could dwell for a couple of weeks and then start moving so would have to be able to identify earliest date even though stock levels unlikely to go down to zero.
