Excel Add-in to use regular tables like Pivot Tables & Pivot Charts

Is anyone aware of an excel add-in or way to use regular tables like pivot tables?

I am only aware that Pivot Tables and Charts can NOT use values, only Sum, Count, Average etc.

I am doing some basic period over period studies and analysis and having to use excel formatting and helper columns to produce the tables and charts I need.

Something such as daily high temperature the first week in April over 5 years that I can see in a table and chart those 7 days per year, etc.
