Excel shortcut key CTRL+Z

Hello,

I'm having an issue in Excel when I try to undo the last action I instictively hit CTRL+Z, however, instead of undo, Excel is inputting the currenct date+time into the active cell. I've tried searching for customizing my keyboard shortcuts or resetting my keyboard settings but can't find anything would have changed this.

Has anyone else come across this issue or can provide any guidance how to fix it back to normal?

I appreciate any assistance, Thanks!
