Formula: First cell minus last cell in an expanding Table

I have a pivot table showing data taken on a certain date. I would like to take the data from the last column in the table, i.e the latest data, and subtract it from the first. However, the table will expand to the right.

For example, with the table shown below I would want the data in E23-C23. However, upon data refresh there may be new data in column F, in which case ideally the formula would be able to return F23-C23.

Is this possible?

Excel Formula:
=MAX(C22:Z22)-MIN(C22:Z22)
be sufficient?
