Formula for employee utilization

Good day

I am trying to figure out a formula to calculate employment utilization based on the following scenario/data set.

Bob and Steve work in a café 2 hours per day (Monday through Friday) selling hot dogs, hamburgers, fries and lasagna. It takes 5 minutes to deliver a hot dog, 10 for a hamburger, 5 for fries and 10 for lasagna. I would like to be able to filter on a date (either a specific day, or a month) and calculate the employment utilization (time spent working vs time spent at work) as a percentage out of 100 for each employee.

Excel Facts

Which lookup functions find a value equal or greater than the lookup value?
MATCH uses -1 to find larger value (lookup table must be sorted ZA). XLOOKUP uses 1 to find values greater and does not need to be sorted.
add a 4th column in which with vlookup, you add the time and then you can make a pivottable of it.
