I have text in cells indicating the days that trainees want to take classes, i.e. SAT or M-TH. How would I calculate the number of trainees that wish to take SAT classes, and those that wish to take M-TH classes?

I tried IF, but, provided that's correct, I'm evidently not putting the formula together correctly. :(

Copy formula down without changing references
If you have =SUM(F2:F49) in F50; type Alt+' in F51 to copy =SUM(F2:F49) to F51, leaving the formula in edit mode. Change SUM to COUNT.
Have you considered SUMPRODUCT for this?

Perhaps, you can use a Countif()

e.g.
=Countif(A1:A5,"SAT") where A1:A5 contain the days
