How to consolidate a year long schedule into weeks?

I have been given a year long schedule of all our employees vacations. They can have up to 7 vacation periods throughout the year (ie 1/3/2022 to 1/7/2022, 1/31/2022 to 2/4/2022, 2/14/2022 to 2/18/2022 would be 3 vacation periods).

Currently each employee has bid on individual days (ie 1/3/2022, 1/4/2022, 1/5/2022, 1/6/2022, 1/7/2022). I need a formula to convert those dates into a cell that has the first date (1/3/2022) and the end date (1/7/2022). Then be able to do that up to 7 times in a row due to potentially having 7 vacation periods.

As of now I’m doing it manually but it’s taking forever. Please ELI5 I’m still learning excel and trying to improve. The first picture is what the current sheet looks like. The second picture is the desired outcome.

Any help is much appreciated.
