I would like to know how to have excel notify me when something needs ordered.

Example: I am to have 500 pallets in my warehouse, I keep an inventory where I add and subtract. When my final total gets below 500 i would like to be notified to order.

Is this possible?

It's certainly possible.

The easiest way is probably to make a column which calculates how many are left and filter (data --> filter --> autofilter) that column for <500 (after you've applied the autofilter, click on the arrow in the cell at the top of your column, select "custom" and apply a "is less than 500" criterion) to see what items you need to reorder.
